Great Chicken Recipe



Awhile back I was browsing other blogs and I apologize I can't remember which one but I found this supper recipe. I tried it tonight and we all loved it- even the kids! Thought I'd share it with you:

Little Italy Chicken Piccata:

4 chicken breasts- pounded
salt and pepper to taste
flour as needed
olive oil as needed
1/4 c. dry white wine
1/2 c. chicken broth
2 T. parsley
juice from 2 lemons
2 T. butter

Season chicken lightly with salt and pepper. Dredge and flour on both sides. Coat a saute pan with olive oil and heat over a medium-high flame. Cook chicken and saute several minutes until well browned on one side. Flip and continue cooking until nicely browned and cooked through. Remove chicken to a plate. Deglaze the pan with white wine, scraping up any brown bits that stuck to pan. Add broth, parsley, lemon juice and butter. Return the chicken to the pan and cook briefly in sauce. Bring sauce to a simmer and add salt and pepper to taste. Pour sauce over chicken and serve immediately.


Little Italy Salad

Dressing:
1 T. Dijon mustard
2 t. sugar
3/4 c. water
2 t. minced fresh garlic
1/3 c. red wine vinegar
1 T. salt
2 c. vegatable oil
pepper to taste
pinch dried oregano

Combine mustard, sugar, water, garlic, vinegar and salt. Pour in blender. Add oil pepper and oregano and blend until all incorporated.

For salad combine 1 head lettuce and slice up 1 red onion, 1/2 package of bacon- cooked and crumbled and shredded cheese.
Just before serving top with enough dressing to coat lettuce. You will have leftover dressing for a later use.

That looks good - and pretty guiltless too! But as I'm not an experienced chef yet (grilled cheese and omlettes are my specialties) I might have to consult my Betty Crocker cookbook for how to "pound" a chicken (do I need my iron knuckles?) and how to "deglaze" a pan. :)
